We reallly don't recommend using 3-blade props for flying unless ground clearance becomes an issue. That's because they just aren't as efficient as the 2-bladers. Make a good 3-blader for display purposes. That's what the top competitors do.
As far as what size you need, we really can't be sure. Since a typical flying prop for the FS-120 Surpass III is a 15 x 8 prop (we use APC), you may need to get a 13 x 8 3-blader, or maybe a 14-incher. You'll want a prop that will allow the engine to turn in the low-to-mid-9,000's at full throttle when leaned to just rich of peak RPM. Any prop that runs the engine in that RPM range and flies the model well is OK.
