Default o.s30vg max.. temp info please...

hi all, i have asked a few people this question and it seem like there is no answer, now i know how to tune an engine..... but my new engine is playing up..lol

my o.s 30vg max is in my savage, its been run in very well but i took it off road for the 1st time the other day, temps were around 250.. great !!

then 3rd tank i was getting 320 !!..., now it was a rich setting still and plenty of smoke exiting the truck so why so high??....i am not worried about it so much but why the massive jump and it still needs leaning out bottom end, so this will surly rise the temp....

if i change the o.s 8 plug to a colder plug will this help, thinking it is installed mainly for break in to help maintaine the easy start, shall i change it??...

any advice will be great, i will be racing this engine and i need it to be working well,... many thanks!!...
