You can cut or form a recess for the barrel of the hinge using a brass tube. then when you put the surfaces together you can force them together with no gap.

I use a round burr or cut out notches on the TE and LE. The burr gives me a tapered hole for the thick tapered center of the hinge pins and I just push the surfaces together as DM mentioned. I get pretty much no gap at all.

Don't forget to use vaselene on the hinge joint and pin ends and I put some in the inlet you create in the TE and control surface.

I often use the DuBro flat hinges and like them a lot. My kingdom for a couple of bottles of Pacer Hinge Glue!! I use a small burr and cut a round counter sink along the hing slot so i get a very tight hinge gap. Depending on the type of TE and LE decides what type of hinge I will use. I often mix the flats and the hinge pins on the same plane. I build all my planes so I am able to add wood along the LE and TE so I get more wood for the hinges to go through. I also use the GP Hinge Slot Cutter for the flat type. It's sort of like using the easy button.
