    That knob is called a tiller. Many larger aircraft had them. 

    If you don't like the free-swivel tailwheel, you can hook it up later. 
    I might not be very good, but I'm fun to watch!

    Castering tail wheels are fine if you have independent breaking "right and left" wheels.

    Indeed in full scale but pretty darn hard to translate to the common Sport airplane or its pilot.
