Servo Size
I thought I would get into gliding this summer. To this end I have bought a Windstar ARF. It will be launched either with a high start or piggy backed on a powered plane.
What size servos should I use? Will Hitec HS-81's work? Or should I go with some standard size servos?

Yep...
Or if you have standards already and would have to go and buy the 81's then just use the standards. The model is large enough that it'll carry the extra weight. In fact if it's often windy around your area a bit of extra weight can be a good thing as the speed will be a bit higher and let you penetrate a bit better.
