Default Torque vrs rpm

I'm wondering if high torque with high kV or vice versa I think I want high torque to correct quickly as I have learned not to over correct I have a good modified 450 electric heli and want to start 3d can anyone help me learn from there experience on how to start mild 3d

3s 3000ma 45c with a 50 amp speed controller my problem is motor prices are all over the place a scorpion for $500 down to China no name for $10 am I over thinking this should I open a catalogue throw a dart at it and pick that motor? It just seems to me a $100 bill would give me choice of a decent one they all claim to be what I need 1800kv to 3000kv is the only thing I know I want
