I need advice on picking up good batteries and a charging system for the 2 trucks I just
ordered
Mammoth and Savage SS 25

theres so many out there but I want to stay away from the garbage.

Get a couple of good NiMh receiver packs, just make sure they are configured for your trucks. It's hard to go wrong with Trinity, kinda pricey, but if you have problems you can get some help from Trinity on it. Venom also has a decent product when it comes to receiver packs, as does Racers Edge. Whichever brand you choose, get the highest milliamp hour rating you can afford. The more mah your pack has the longer it will go between charges. This becomes VERY important if you run high torque and/or digital servos.
As for charging equipment, like mah go for the best you can afford. I've got a CE Pitbull and it's the best charger I've ever owned. Another good charger is the Great Planes Triton. It will charge any cell combination no matter what they are made of. The kicker is top shelf chargers require a DC power supply to work. Expect to spend around $250 for a good charger and power supply. You can spend less for a multi power, sport level charger made for 6 cell stick packs used by the flashlight crowd, and you will have problems with your receiver packs, or you can spend a bit and have a charger rig that will handle your charging needs with zero problems.

I'm wondering why their different in sizes, and if I will have problems fitting one into a truck vs. another.

I'm also contemplating this charger. its pricey, but for what I will be buying in the future of the hobbie
I think it might be worth the investment. and I can also use it to charge my heli packs.

Do I need a power supply with this one?

Unless you plan on getting in to electric car racing, the Turbo 35 is way too much charger for simple receiver packs. The Pitbull, also made by Competition Electronics, is all the charger you will ever need for receiver packs, but if you have other types and sdizes of packs to maintain, the Great Planes Triton would be the best bet.

The guys from my LHS rave about the Triton in the pits. I have a Super Brain 969 and I like it fine. It is the only one I have used so I can't compare. I did do a ton of research before I bought it though and I thought for less than $100 it was a bargain.

If I was going to spend the money that the CE Turbo 35 costs then I would be forced to look at the Futaba instead. The Futaba will charge up to 35 cell packs! Yikes! Anyway, they are about the same price but I think the Futaba has a boat-load more technology in it. The software on my Super Brain reminds me of an old DOS computer system.

I charge my Roto Start batteries, Trinity receiver pack, Nicad glow starter, and my kids toys with the Super Brain.

but about the receiver packs, should I go with the HPI that I displayed?
I don't know how they fit into the trucks yet, the mammoth and savage being my first 2 MT's

Yes that will work fine. ...but it is not in stock yet at Tower. If that is an issue then I have been real happy with my Trinity 1150mah.
