Try Dynamic Balsa at http://www.dbalsa.com/. In addition to custom cutting, they already have a large selection of foam wings.

I haven't ordered from them yet. They have a form that asks for very specific dimensions. You can send the airfoil (NACA #) or a cross-section that they will scan. All the cutting is done via CNC foam cutter.

PAC Hobbies in Smyrna TN also cuts foam. This is Mike Dunphy, and he also has a CNC machine.
