Default 8FG - Sticks On Different Channel By Switch?

By default the sticks (J1 - J4) are on Ch 1 - Ch 4.

What I want to know is if it is possible to assign SA (for example) to have Ch 1 be disabled (at center) and then have Ch 5 be controlled by the stick J1.

No. That is something the transmitter's programming will not allow. When you decide which function is controlled by which stick/knob/switch/slider, you decide globally for that model memory. You cannot change it "on the fly".

So the work around would be making a new model memory with the different settings?

Yes, but you could only change from one to the other by flying, landing, turning off the aircraft, changing the model in the transmitter, turning on the new aircraft, and flying. It won't be something that you can use to easily change in the same model, if that's what you're trying to do. If you have two configurations for the same model, then the last step is turn on the model again and go fly.
