I have an older Futaba 4ch Conquest transmitter. This model does not have servo travel adjustment. If possible, I would like to ad another pot or modify in some way to add travel adjustment.

Why can't you move the connections to a different hole in the servo arm or the control horn? That is the normal way of getting more travel. Changing the pots in the radio is not that difficult but by going to the next level of pot, you could easily exceed the limits of the travel of the servo. In addition, the transmitter would have to be recalibrated. It is really not a good idea to change the pots.
