Default Servo no voltage load

Hello there
I am looking to install two servos ( preferably JR's ) on the one flying surface ( elevator ) on my next aircraft. I cannot split the elevator and am primarily doubling up as a servo back up ( and load distribution ). My question really boils down to which servo's will give me around 100oz/in torque yet be a low load to the other should it fail?
Thanks Steve
