Typically most rechargable batteries will go slightly over their standard voltage after a full charge...i.e. a NiCad will have about 1.45 volts per cell after a full charge. Multiply that by 5 and you get 7.25 volts...a bit more than your equipment will want to handle without damage.
SO...yes, a voltage regulator IS a good idea.

I would say a regulator is not needed when using 6 volt packs for your servo's. I am running 2- 6 volt Nimh packs(4500mah and 2700mah), 2 switches and a jomar battery backer. I am using a regulator on my ignition system since the ignition unit specifies that a regulator should be used when using a 6 volt pack. It really boils down to your own personal preference.
