Default when standard servos are not enough

I just recently bought my first "non 40 sized engines" a ST75 and ST90. I am curious as to at what size engine/airplane do you need to start upgrading from standard servos.

For example, will a 60 sized Cap, Edge or Extra with a 90 sized engine be OK with standard servos? What about a same type plane with a 75?

I know that a lot of this depends on type flying and the exact plane, but are there some general guidlines? As I look at servo torque, speed, etc I would rather have more power than not enough but also dont want to spend three times the price of the plane in just servos.
