I suspect that you are looking at a non-existent product. There will be precious few simulator writers who have any idea how a sailboat works and probably fewer customers if they wrote one. The result would be, because of the large effort and small market, a big price tag.

There was a simulator perhaps twenty years ago. I've still got the controller but not sure about the software or even if it would run on a modern computer

Actually there is a few simulators. Sail simulator. Virtual skipper 5. Although these are not rc boat simulators, they use full size boats.

There really is no need to use your radio. A sailboat isn't like a helicopter or a plane. It is very simple control-wise. And learning the radio really isn't necessary.
