best heli to make scale bird
just starting out and moving up to a 30 size or bigger heli. my question is which route should i go gas nitro or elec, and which heli should i buy to learn more on now, and scale it later.

In the 30 size arena you will find the Hawk Pro a great heli to take you from basic training and afterwords it can easily take you well into 3D aerobatics. But if you are much into scale, it will also easily fit into many of Century's 30 size Scale fuselages. You will find test reviews here on RCU of their 30 size Bell 222 and their A350 Squirel.

If you want to go bigger (50 size) you will find their Falcon SE will do the same. These come even more detailed then the 30 size.

yeah, century's helicopters are excelent first nitro machines! And all of their bodies they sell are made to fit them.
Now I prefer the Hirobo Shuttle over the Century Hawk. I think that the shuttle can be taken to where ever your flying preferences want it to, whether it be training, scale or hardcore 3D. Then again it all depends on the set up, im quite sure a Hawk could be wrung out just as much as a Shuttle if it was set up right. Also I find the Shuttle to be a tad bit easier to work on....for some reason I always found a belt driven tail to be easier to set up and maintain (no misalignment or set screws to some loose)
Now the big deciding factor....price and configuration. The Shuttle KIT is going to run you about 250 while a hawk ARF will be around 200
But that is just my personal opinion. Both are excelent helis to start out with nitro on and will take you very far.

if your end goal is scale the shuttle is by and far my recommendation in a 30 size but i have to disagree with Zagiflyer576's comment that they'll do 'hardcore 3D' they lack the collective travel and are a bit on top heavy side for that but are great learning birds as well as scale fliers due to their stability.
