Default Question about Foam Cutting, wing making, etc

How do you guys make your wings with the proper airfoil shape with the foam cutters? Whenever I've tried this making other projects, my hand isn't steady enough. Do you use some sort of movable platform like a milling machine would use?

Also, how do you make complex 3D angles? The best home-made project I've seen was an Su-27 Flanker and I can't imagine how hard it must have been to assemble that foam---let alone cut the correct angles!!!

I have tried in the past to cut a conical shape but it's really hard. Just looking for some tips from you guys.
