Default Vintage RC PBY CJM retracts off water

Hi
I am looking for some advice. I am planning on building the Vintage RC 108 inch PBY. I intend to operate the plane off both water and land. My question is what do people who operate the plane of water do with the retract system. Do they leave it in the plane while flying it off fresh water or do you remove the gear and close off the wheel well to keep the water out.

If they remove the gear can I ask how you do it, as it seem to be fit during construction and cannot be removed without major surgery.
