The best thing to do is drill and thru-bolt anything your looking to attach to the carbon plate. And, the best tool to drill carbon plate is a solid carbide drill-bit. They are also very expensive....

Is anyone out there aware of a formula for calculating the number of G's a design would be able to pull. It would be helpful when trying to design a structure.

Ahh, Carbon Fiber - God's gift to composites. Like Tom said, the only downside is that it can be difficult to determine if it fully wetted out. And of course, different weaves are easier to handle...
