if you teach your kids (depending how young they are) about low-voltage cutoffs then you hopefully shouldnt have a problem. lipos are good down to 3.2v / cell i believe, and my turnigy marine esc...

We have been using the Turnigy marine ESC's, I have have successfully programed them on an AM, FM, and spectrum radio systems. So at least for that particular ESC it should work great regardless on...

Using a E-flight Park 400 3700kv. I burnt up the 3200 Turnigy we bought due to inadequate cooling. Its quicker than the 3200 for sure. Unfortunately, It was sorta expensive compared to the hobbyking...
