Mixing and encoding are done in the transmitter. It doesn't matter which receiver channel is used for which function. Plug the servo that executes the appropriate function into the receiver channel...

It is most definitely NOT a trainer. It's not hard to fly, bur it goes where you point it and it's quite fast. Train your wife with something easy to fly like a Slow Stick.
