Many slope gliders use ail/elev systems only, remember that aileron is ROLL and rudder is YAW, in thermal conditions a judicious of both, together with some elevator input will result in aFLAT turn....

Why a wing? With that 400 inrunner and the right ESC you have a vast choice of models shaped like real airplanes to choose from. Most of which will give you a better glide performance than a wing....
