Ok one thing at a time then.. how do ESC's work normally ? When the power is too low they cut the motor to leave enough power for the servos to keep working until you land ?

When I fly, the motor cuts after about 30 seconds. I can put the throttle at about 50% and it will run another couple seconds before cutting again. Is this because my battery isn't charger properly ?...

There's no plug yet but when I rotate the crank and the piston goes back down there's a bunch of bubbles and oil coming from between the crank case and the plastic back cover that holds the remote...

With only the lower wing, I would add a few ribs to make the wings a bit longer for extra lift and maybe adjust the airfoil a bit ?
