Thats a sympton of one of the wires from the motor being bad. Probably a bad solder joint.
When the motor is twitching like that grab a motor cable and wiggle it, one at a time. With any luck the...

I'm using a 16/15/4 Mega and lipo in my EZ* with no modification to the thrust angle and she wants to dive at full power. A little up elevator is neede.

Great looking job on the Cub and your flight box is very neat.
I would get rid of those Tamiya connectors, they will let you down.

I am wondering if your spit has been set for lipo use. This would raise the low voltage cut off.
Great for saving your lipos but you will not get much flight time with nimh.
