Sorry I missed your second ??
I would use a ball link on the servo. A locking nut is not necessary as the threads will fit real tight and your adjustment isn't going to move.

Cool Flap hinges. I'm just finishing up a Ziroli '47 and I agonized over the flap hinging but I chickened out and used the Robart "faux-fowler " hinges...looking forward to watching your progress.
