You sure can.... The blades need to be nearly perfectly matched (weight wise) & aerodynamically true. You can do some minor patching using tape. But the tape needs to be applied W/ care to ensure...

Some have had troubles W/ the 3100 motor spooling up smoothly. You'll probably find more people running the 3900 motor, than anything else.
Couple things to do to fix the spinning problem...

If the servos are moving then you don't have crystal issues.
Hate to keep beating a dead horse, but have you got the throttle trim all the way down?

Make sure your throttle & throttle trim are all the way down. Always turn on the transmitter before powering up the heli.

Yes, Definitely have watched his videos. And definitely a "must see". The departure from the original "linear" curves was deliberate. (which is why radios W/ 5 points curves are considered superior)...

They are all +60
The Sign (+/-) you need is dependant on how you've got your servo reversing configured, and how your servo actually moves W/ respect to that sign.
So if your servos are moving in...

FWIW
You only need to fool W/ the left side idler pulley. The right side bearing can be left in stock configuration.
What they want you to do is remove the idler screw. Throw the flat washer...

Could be one of the gears has lost a tooth.. If so, you can sometimes do a quick and dirty fix, by rotating the gear W/ the missing tooth around such that it doesn't come into play over the servo's...

If I'm tracking what you were doing & seeing, I'm thinking the problem could be in the servo.
The servo knows where center is by the position of a pot attached to the output shaft of the servo....

Use the pitch links to manually crank the pitch down. Try 1/2 turn at a time, bet it will fine W/ in 1 to 1 1/2 turns.
