You can always use a brushed motor with higher winding (15turns or 17turns)... Or just have a look at the max continuous current that your former motor could handle and try to find something that can...

Under a high sudden load, battery voltage can drop instantly and if the ESC has low voltage protection it can cause this stops. I'm not very experienced, but i've heard that this sometimes happens...

on 2S I would have 19600 rpm (max.)

on 3S I would have 29400 rpm (max.)

on 4S I would have 39200 rpm (max.)

So... 3S seems to be the most reasonable option but I already have 2 X 2S...
