On the way to the field it sits on the dash near the defroster vents in my car. It usually is around 30-35C when I get to the field. If you have the heat on in the car, it will most likely be fine...

I fly all day long with LiPo and I live in Canada where it's anwhere from 0C -> -20C.
What I do is warm the LiPo prior to flying. It works great.

No, the ESC can be programmed with the transmitter. Although not all functions can be set due to the limited on / off commands given by the transmitter.

I would go for an AXI 2208/26 coupled to a 7X4. It will produce about 14oz of thrust at 10A and weighs 1.6oz. The Castle Creations Pheonix 25A would be a good choice for an ESC.
