Nick,

I don't recall ever having a nose heavy attitude with this plane, just move the CG slightly to adjust.

Sandwich panels are the strongest structures, as they effectively are "I" beams, wich carry huge loads. I like your battery cage design, but it would never have the strength of a sandwich panel.

The best material for that application is a sandwich panel, it will be the lightest and strongest, any solid laminate will be too heavy and not as stiff, try Sierra Composites Sandwich Panels

I would have to say you have the wrong setup. 6.5lb plane should run 5S pack preferable 5000maH. Your motor rpm/kv is too slow, and your prop is not matched to a motor that is...

Yes, don't use the landing gear blocks, if its an old kit, or really any kit that uses a solid piece of wood for landing blocks, odds are one or both will split on a hard landing, then its a big job...

The foam wing cores do not come joined, so its not an incomplete kit. Use proper adhesive when joining the wing halves and sheeting you won't have a problem. Use 20 minute epoxy for the fuselage, and...

Not sure about a field there. But I just helped a guy at Scobee fly his F-16 foam EDF with wire landing gear, and having all that space was excellent for even the small EDF.
