I took everything back to my LHS tonight and to make a long story short, they swapped receivers from another DX-7 which solved the problem.

My guess is that you're overloading the BEC in the motor speed control. Try this: Plug in a standard 4.8v flight pack directly into the Spektrum receiver (you don't need a switch)...
