I think between 1 and 2 degrees would look about right. 1" under the end of the outer panel would be a place to start. I've always found that flat wings look droopy.

Put some blocks under the wings to limit the distance the wings can drop. You want it to be able to move only 1/8" or so. Now add just enough weight to the right wing tip to bring the left wing up....
