It's a 42 pole motor, probably losing commutation synchronization as others have had with high pole count motors. You might try a jeti mezon esc which seem to do better with high pole count motors.

Try flying directly away from you or towards you. If the planes in a straight line the rudder trim is confirmed. A curved path indicates the rudder trim is not correct.
