What I meant was, there is bound to be a price to pay in the weight of the installation, and there doesn't seem to be any advantage to offset this disadvantage

What IS the reason for using water...

Most boat glow engines have water jackets as they are water cooled, and some have simple conversions to the cylinder.

Whatever you do, though, the heat exchanger water to air has to dissipate...

Yes true. There is an element of providing structural strength to the engine, but the main reason is to be able to design selective cooling into the engine at spots that need it more than others....

The heat has to be dissipated using a radiator whether it's directly from the engine or via the water, so having water as an intermediate fluid to take the heat away is pretty pointless.
