At least with my plane, during knife edge the yaw changes depending on how much rudder I use. I don't remember which way, but I set up my low rate with just enough throw to hold altitude in knife...

Pretty typical for a lot of Ultracote colors. Great stuff to work with but not nearly as opaque as Monokote.
