The harden hub is not a fix, it is a upgrade. It is for hardcore 3D flight.

On this heli if you plan on 3D flight, you need to get to 3000 rpm. All you need is adjust the linkage to get pitch...

If you need a lot of tail pitch to compensate the main rotor tourq, that means your head speed is kind of slow that main blades use a lot of pitch to lift.
Try to use 11T first, I will suggest...

Make sure you have good head speed. If it drift to all direction, it is most likely the slow head speed cause the problem.

no, it was original designed to protect ESC or RX that is installed on the upper tray.
By removing it, you have risk the battery on miss-ship.

FYI, Some pilot prefer to mount the batteries at upper tray and ESC at lower tray. Move the battery closer to blades that will help on roll since center of gravity is higher.
