If you need a lot of tail pitch to compensate the main rotor tourq, that means your head speed is kind of slow that main blades use a lot of pitch to lift.
Try to use 11T first, I will suggest...

Make sure you have good head speed. If it drift to all direction, it is most likely the slow head speed cause the problem.

no, it was original designed to protect ESC or RX that is installed on the upper tray.
By removing it, you have risk the battery on miss-ship.
But this setup do help on doing fast roll manuver...

FYI, Some pilot prefer to mount the batteries at upper tray and ESC at lower tray. Move the battery closer to blades that will help on roll since center of gravity is higher.
