Use 2 batteries and 2 switches. The extra switch doesn't weigh that much and gives you redundancy on the part of the system most likely to fail.

There is such a huge difference in the reynolds number between our planes and the full scale planes along with wing loading that it is impossible for our planes to pitch like the full scale planes do...
