You have a better chance with 1 esc per motor variation than with 1 esc for 2 motors variation. Good quality motors and good esc's will not give a variation you will notice, I think.

Are you sure you are not mixing up brushed and brushless?

Your Turnigy 30A ESC is a brushless esc, you can't measure voltage on it, at least, not at the motor connectors.
