I usually do not run dual batteries until 50cc size. That being said, there is no reason not to. I would however suggest LiFe batteries as you will save some weight and they will deliver more current...

I would tend to think something along the lines of the OS 70 4 stroke would be ideal for a 71" Cub. Better to leave the overpowering to the guys who are capable of it. That is a whole differnt topic
