That's really great to hear, the climbout was really quite good and if that was achieved without a gyro and even without rudder I think it proves how a correct thrust line goes a long way.

The CG is one, and it is a single point in 3 dimensional space. It may shift during flight as the weight distribution inside the plane changes (fuel sloshing, fuel consumption, moving parts).
