wouldn't it be possible to test the battery by hooking up the multimeter through the charge jack, have the reciever turned on and operate the servos, thereby getting a read on the battery under load.

It is probably possible, you just have to be very conscious of what materials you use. Make sure you use 2mil coro. With the smaller wing and shorter fuse, you might be able to get the 2lbs. Also...

you can use a heat gun to get out the wrinkles. Shouldn't hurt anything at all, just be careful not to melt the stuff, just warm it up so that it shrinks.
