I am thinking about trying a set of 7 cell packs to see what happens, just trying to get the most out of what I have right now.

Works fine, and definitely improves speed a few MPH. I have a buddy running 8 cell packs without any problems as well, although I wouldn't recommend that.

I hope you have a better esc for that new motor. Am I going to have to get dirty and break out some lipo action?

Tenergy batteries work as well as my IB4200 packs, and are much cheaper. I have 6 cell IB and Tenergy packs, and 7 cell Tenergy and MaxAmps packs. My Tenergy packs blow the MaxAmps packs away. I have a friend running 8 (yes, eight) cell Tenergy packs in his stock BJ. I have heard that Tenergy packs were bad a long time back, but they obviously are great now. I have Venoms too, but they are very cheap quality. I relegate them to buggy and car use only. Tenergy packs are the way to go. I've bought 6 sets in the past year and all have worked flawlessly. I'll definitely keep buying them.
