I scratched built a 40 size twin (48"WS) and put two Magnum 2 cycle 28 engines on it, each angled in 4 degrees. Had a ball with it. Engines were very reliable, but the occasional engine out situation made me a nervous wreck; I was not having fun while expecting an engine out. I practiced engine out situations by taking off on one engine, but I always lost it while trying to make the first turn. So I redesigned it as a twin tail Pusher/Puller and used the same engines. Now the fun really started. An engine out situation was NEVER a problem. The plane was a little heavier and had more drag than the twin; things had to be absolutely perfect to take off on one engine. It frequently took me 3-4 tries and the whole grass field to take off; I had to learn to make the first turn while 6" to 12" off the ground; very thrilling. An engine out was never a problem; I could fly all day on one engine.

I cannot spend that kind of money on the Saito 30's.
Magnum 28's, I'll look into that.
Fox has 25's.
Here's the model I'm thinking of putting engines in. I have to do something to create interest in it.

The most reliable, powerful .25 I have ever used is the OS .25 FX. IT is by far the best engine in this size commercially available. From ease of use and consistent running. The Thunder tiger .36 is good as well. Also the OS .32 SX is a great engine. more power than the .25 but on par with the Thunder tiger .36. I mention these engines because of ease of use and reliability. The main concern that you have.
