I use nylon standoffs from the hardware store. They are thicker than Pex and come in sizes to match the size bolt you plan to use. Esprit Models also has a number of motor mounts for various size motors.
Flying a 12 pound plane is going to take more than a 60 A ESC and a cheap motor.
Check out Innov8tive designs Innov8tive Designs/Scorpion products for a great selection of high quality motors, ESCs and related products. Lucien Miller has spent a great deal of time testing motors for different battery and prop combinations so you know just what you will be getting. besides he also includes all the technical specifications for each and every motor. Something that no one else does. You may also want to check out Scorpion Calc.
For a 12 pound plane like the Telemaster you will probably want to consider a Cobra 4120 series or Scorpion 4020 series motor.
All you have to do is call Lucien and ask him.
Personally, I would not use a cheap motor on an expensive plane but that's just me.
