Yes a symmetrical airfoil will work well on a tail less delta. I've built and flown several Laser Arrows and the airfoil is symmetrical. They fly rock solid and float like a sail plane during landing. The only problem with any delta is the tendency to tip stall. I put wing fences and tip plates on the Arrow and solved the problem.
