Generally, FM has better noise rejection, and is less susceptable to interference. FM can be used to encode either PCM or PPM. Of the two, PPM responds to interference by servos twitching. PCM responds to noise by "lockout and failsafe". This means that the receiver rejects a signal that does not meet the correct signal pattern, and the failsafe is what you define (in advance) that the receiver should do with the servos in the absence of a signal. On a car, this might be steer straight and motor off.
