The surpass .70 will have plenty of power for 3d. Pullout out of a hover might not be as good as a .91 or 1.00 but it will still work. The .70 is also heavy, heavier than even a Saito .91 or 1.00.

Your servo choice is fine, the torque is probably overkill on the ailerons and elevators. You could have probably gotten away with some cheaper ones like 525bbs on those. The 645mg is also a bit slower than some other options(even at 6 volts) but they will still work fine.
