With most of the better ARF's on the market, the engineering and instructions should make it easy enough to do it blindfolded.

Note I said "SHOULD".

I've seen some that were, and some that weren't. I haven't built any of the "Stik" ARFs, but if you want one that's very aerobatic, and VERY easy to assemble, take a look at the Midwest Aerobat:
