I've got some Hitec 225 MG's on the two elevator halves of my Cap 231 EX running on a 6 volt system and have yet to have a problem with them. The one this I do notice with them is that they don't seem to center as well or are as precise as the 500 serries Hitec servos. I'm kinda in your boat as well as I'm going to be getting the big DP ultimate too. i was also thinking on the same lines as you with getting the 225's for the ailerons but I'm honestly still up in the air about it. I'm also trying to decide on the power plant. I've got a Saito 180 that I could put in it but I'm not sure about that either.... I'm thinking YS 140 (if I can find a deal) or possibly a Brisson 2.4 because I'd really like to have a gasser.....Still up in the air on that too.
