When I started flying in the 70's, a standard servo had 16 in/oz of torque. Shortly there after 18 in/oz.

The modern servos are way plenty, I even run the micros on my ailerons. They still have more torque and speed then those old standards had.

I do recommend a double ball bearing on the elevator. Much less slop in the output. You can make low passes like a surgeon.
