Take a look at the SkyShark kits http://www.skysharkrc.com/ They are full kits, but they are very well documented with excellent instructions. I know they have a 109, however I am not sure about the Stuka.

As long as you stay with fixed gear, a film finish and build light, they will fly fine with a decent running ball bearing 46. If you use retracts, build heavy and/or glass the plane you would definitely want to use a 61 or possibly a 75.
