From experience with hand launching... a symetrical wing does just fine

If the wing loading is low enough for a high lift airfoil hand launch, its low enough for the symetrical airfoil.
There's also the catapault launchers to consider... they are relatively easy to build and will launch a plane that can't safely be hand launched. the catapault will give the exact same launch every time once you have it set up correctly, no 2 hand launches are the same. It costs about as much to make a catapault as to build a coroplast airplane (see
